parmesan pork chops

I still don’t like pork chops but if you add cheese, I’m in. Makes 2 chops but easily doubled.

  • 2 boneless pork chops

  • salt and pepper to taste

  • 1/2 cup Italian breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 large egg, beaten

  • 2 tbs olive oil

Preheat the oven to 400º.

Season pork chops with salt and pepper to taste. In a shallow dish, combine breadcrumbs and Parmesan cheese. Dip pork chops in egg, then breadcrumbs.

Heat a cast-iron skillet over medium and add the olive oil. Sear pork chops on both sides until golden brown.

Place in oven for 5-10 minutes until cooked through. Allow to rest before serving.

crockpot pork chops

Literally couldn’t get any easier. I will go home at lunch and throw this in, so it’s ready for dinner. The flavor is mild enough that any side dish works well. Serves 2, but can be doubled if your Crockpot is big enough.

  • 2 boneless pork chops

  • 1 chicken bouillon cube

  • 1/4 cup hot water

  • 2 tbs dijon mustard

  • 1 red onion, sliced thick

  • black pepper to taste

Dissolve the bouillon cube in the hot water. Whisk in the mustard and the black pepper.

Add the onion slices to the bottom of the Crockpot. Place the pork chops on top and cover with the sauce.

Cook for 3-4 hours on high, and don’t forget to serve with the onions.

honey soy pork chops

Let it be known I don’t like pork chops, but I ate these. Would be good with rice or steamed veggies. Serves 2 but can be doubled if your cast iron skillet is big enough.

  • 2 boneless pork chops

  • 1/2 cup flour for dredging, season with black pepper

  • 3 tbs butter

  • 1/2 cup low-sodium chicken or vegetable broth

  • 1 tbs low-sodium soy sauce

  • 1 tbs honey

  • 4 cloves of minced garlic

Coat the pork chops in the flour/pepper. Add 1 tbs butter to a cast iron skillet on medium heat. Add the pork, and cook for 3-4 minutes each side.

Meanwhile, whisk together the broth, soy sauce, honey, and garlic in a small bowl. Once the chops have been cooked on each side, add 2 tbs butter and the sauce to the pan. Reduce the heat to medium-low and cook until the pork is white all the way through.
